Have you seen https://incubator.apache.org/openofficeorg/get-involved.html ? That should act as a good starting point. There is a new http://incubator.apache.org/openofficeorg/orientation/index.html which is being put together too. Sing out for more help when you check it. There are many more here who know much more than I.
