None of this sounds particularly difficult to do:
Tools->Options->OpenOffice.org->View->Scaling
Tools->Options->OpenOffice.org->View->Icon
View->Toolbars->Customise
And then prepare some simple documentation with screenshots from this

Sounds like a good schools project to me?
