ISO_8859_1 would have been a better default. [~michael-o] I see no reason why 
we could not use ISO_8859_1 here.

[~jcompan...@gmail.com] `Simple` variety of message producers and consumers are 
not intended for productive use. They exist merely to facilitate migration from 
the classic HttpClient APIs to async APIs. One really ought to use custom 
message producers / consumers tailored specifically for the given application 
domain.
