Currently the connector only supports POST requests, but with the OS community
it could easily be adapted for GETs, PUTs, DELETEs, etc.

Thanks for reaching out. This sounds like a promising addition!
How far are you in the process of building the connector? We're currently
working on externalizing the connectors which are currently hosted in the Flink
repository to their own individual repository. You can look at the
Elasticsearch connector as an example (though still a work in progress), see
https://github.com/apache/flink-connector-elasticsearch. This would likely
also be something that we would want to achieve with your contribution.
