Current (1.11.1) version of flink-connector-kinesis is compiled against version
1.11.754 of the AWS SDK, which does not include the new af-south-1 (Cape Town)
AWS region.
Looking at the release notes for AWS SDK - this region is included from version
1.11.768 onwards.
I'd be happy to try and create a PR for this.
