I finally got around to this.  I built against AIR 2.6, but noticed that
the -app.xml is set for 3.4.  Is that on purpose?  Does the build script
change that somehow?

I could swear that in past releases I was able to change my Mac's language
and restart the installer and it would come up in that language.  That
isn't happening for me.  Should that work?  It works for other mac apps.
