Hi Max It was good to meet you and I'm glad that you enjoyed being there and all that booth activity!
FOSDEM is a major event and getting a devroom there can be difficult. I think we did an application for one last year and were turned down so we are not guaranteed to get room or even a booth at the event actually. (We need to apply for a booth each year too!) We know that Apache projects cover a broad spectrum which is why they feature in so many of the FOSDEM devrooms. We could always apply again in the future and see what happens.
