Coming back to this question. Such a page already existed but was last updated somewhere in 2015. Altough it took me some time, I just completed updating this list, and the Wikipedia page can be found here [1]. This way, when someone wants to start/continue with this task we can simply point them to the list of projects on Wikipedia.
