We've done a few multi-speaker. The only real challenge is keeping the same
audio level between multiple speakers, but I can always tweak that in edit. I
interview using Google Meet, so only the active speaker shows on screen at a
given moment, so it doesn't look like a crowded room.

That's a fantastic idea, and definitely the kind of story that I like to tell.
Airflow, in particular, already does a good job of publicising the technical
details, and so I agree that you don't need that exposure as much as some other
projects do.
As far as logistics go -- I'm in Eastern US time zone, and tend to be very
available on Mondays and Fridays, but have other availability during the week.
I'm sure we can find some time that works for several of us. If it's more than
2 or 3 people, it might be useful to use one of the various online scheduling
tools to find a time, but let's figure out the who before we focus on the when.
