I think this discussion really comes down to that last bit:

"What part of the OS can I trust not to be changed by the provider?"

I don't really have a answer to that. It is a hypothetical scenario and I am 
also not the right person to speculate about that.

On the plus side, if that is a legit concern to you, you can always do your own 
build of B2G and flash your phone with code that you have verified. It is more 
work but you would essentially get the same OS except it would be fully under 
your control.
