This appears to not be a bug with gnome-calculator.
Upon investigation by changing the font from "Ubuntu Sans" to
"Cantarell" using gnome-tweaks, the button label appears properly as
"=".
I can then only conclude this is a bug with the `fonts-ubuntu` package.
