If this is not a crash then it might be expected... depending on what desktop "sharing" means. If desktop sharing means to share the physical desktop then certainly I would expect the remote connection to fail when the physical desktop loses its monitor, because there is nothing to "share". If you want something that can survive monitor disconnection then that would more likely be called "virtual desktop" instead of "desktop sharing". And I'm not sure which GNOME claims to support.
