If you want the ability to set different scaling factors per monitor then you need to be using a Wayland session. Having Nvidia in the mix makes that more difficult and potentially buggy but you should check to see if 'Ubuntu on Wayland' is an option at the login screen (bottom right corner). Starting in Ubuntu 24.10, Wayland will be used by default even if Nvidia is present.
