Actually, I don't think Wayland was disabled but just not the default.
So we need another explanation. Luckily I got another explanation :)

Both the default Xorg and the default Wayland sessions are called 
"ubuntu.desktop" (under /usr/share/xsessions/ and /usr/share/wayland-sessions/ 
respectively).
The non-default sessions instead have a -xorg or -wayland postfix.
When the default changes, the saved session name is still "ubuntu" but it now 
points to a different session, thus the switch.
