Hi I have a second generation Ipod Touch (4.2.1 iOS) and I had the same crashes. So this is how I make things work. Once the ipod is detected by the computer I double click on the Ipod icon and Nautilus opens up with the files on the device. I then go to Itunes_Control/iTunes/. I rename the file Playcounts.plist as Playcounts.plist.txt. Then start Banshee (I have stopped using Rhythmbox.... I guess you could try it). The sync works fine. A bit cumbersome but effective.
