Unity will show the more traditional menu bar layout (File, Edit, View, ...) in its global menu bar. Pressing F10 should open those menus.
GNOME applications are moving towards a gear menu on the right side (in ltr-layouts) of the toolbar. Evince does this as well (it has two new buttons on the toolbar that open menus: view and actions). You will see those when using GNOME shell.
