Jeremy, We already do add color icons in ubuntu-mono for a few apps. Ex: Nautilus > 'system-file-manager', 'user-desktop' . We do that so that these changes affect Ubuntu only and not other downstream distros which might use Humanity. Also, these icons are most probably proprietary, so we do not want to add these icons to Humanity and change the licensing/authors/etc..
