I have removed the packages and restarted the machine just for good measure. This time shares-admin does not prompt me to install NFS and/or SAMBA - even though they are no longer there.
My testing was done newly installed 10.10 in the form of VMWare virtual machines running on a 10.04 host. I will test on a physical install of 10.10 32 bit shortly. sudo and gksu both prompt me for authentication on the machines.
