Public bug reported:

Binary package hint: evolution

For certain emails, it takes a very long time to generate a view for the
"preview" pane. None of these emails have particularly bizarre
formatting; in fact, I have only noticed it with plain text messages
with no quirks at all as far as I can tell. There seems to be no rhyme
nor reason for the very slow rendering; I just see the "Formatting
message..." task in the status bar remaining at 0% in the status bar for
anything up to 5 seconds.
