I have this issue on Lucid, and have had it for as long as I have used evolution. It seems to me that this is not caused by evolution forgetting the password, but rather by the occasional inability to reach the email server. If you connect to the server every 10 minutes for a day or two, sometimes the connection fails. In this case, evolution should know that the disconnect was not caused by failed authentication, but by failed network connection. I believe evolution assumes the password was wrong and asks it again.
Furthermore, if you click cancel to this unnecessary password prompt, evolution does forget the password; it will ask the password next time you try to manually connect to the email box.
