Thanks for your bug. Please describe one issue only by bug and install
evolution-dbg and evolution-data-server-dbg to get debug backtraces for
it.

That's normal, gdb stops the running so you can look at where you
stopped it, you need to type "continue" to keep it running after
attaching gdb. None of your backtrace looks like a crash, you only
attach it a random point while it's running and keep a backtrace then
