I don't think this is a bug in Evolution. As far as I know, the way that Gmail works is to put a copy of everything you send into the "Sent Mail" folder. This works great when you are using the web client. However, it also does this when you send something using the SMTP server.
One of the folders listed on your Gmail account (when using Evolution) should be called "[Gmail]" All the sub-folders in there are the places where stuff gets automatically moved to. (Also, if you set the Drafts folder for your Gmail account to "Inbox/[Gmail]/Drafts" you will be able to view drafts started in Evolution in the web client) What you really need is an option to not do anything with mail that you send, since Gmail automatically takes care of it.
