"Text Editor" is the Name= of /usr/share/applications/gedit.desktop, that because GNOME uses the function as name for the standard desktop app, rejecting the bug since that's not an epiphany-browser issue. GNOME could use an easier way to change the associations though but there is already some other bugs about that
