My Vaio requires me to reboot in order to make the projector show up. Depending on which resolution I set the video to feed the projector, you may have to log out and back in. Just get to your presentation a minute early. Be aware of another bug, which will permanently disable desktop effects after you set the Preferences --> Screen Resolution nice and high.
I believe that the Mirror Screens option may cause you trouble, depending on your projector. The good news: on my projectors, Ubuntu's resolution and handling kicks Vista out of the park.
