I open evince just like you: from the command line with the name of a
non-existing file as parameter (e.g. 'evince blah'). I then get a
separate 'Evince Document Viewer' window with a yellow box below the
menu bar that says: "Unable to open document", with a subtitle "Unknown
MIME Type". See also the attached screenshot.

Maybe you use a different version? I have evince 2.22.2 using poppler
0.6.4 (cairo), from the Ubuntu Hardy repositories.
