Well, I think it wouldn't be a problem to install both in parallel. gimp-print (gutenprint) installs the plug-in to /usr/lib/gimp/2.0/plug-ins/gutenprint (even though it adds a diversion form [..]/plug-ins/print to [..]/print.orig which seems to be superfluous [1]), so both plug-ins should be available and usable in parallel. If this is not an option for gutsy due to other problems, then it could be solved with a separate binary package just for the gtk+ print plug-in, e.g. gimp-gtkprint.
