I rebooted my machine, and alas, the problem is still there; so sorry about my preceding message. I tried it with Desktop Effects turned off, and then there's no flickering anymore on fullscreen view with EOG. I guess the flickering must compiz related.
Furthermore: When Totem Movieplayer is put to fullscreen, this problem also occurs.
