Late breaking news: The last update I did may have sort of fixed it - or at least I did something I didn't before. When I click on a .pdf to open it it shows the grey screen as usual, but as soon as I change from its default 400% zoom the document appears. (The document is still there when I return to 400% zoom)
This is still probably a bug, but a lot less severe than it looked earlier.
