I've tried to search at mail-archive for REMOTEIP but as this is part af
many mailheaders this returns 16 pages and 156 matches.

In the manual I can read:

%REMOTEIP% Adds the IP address of the remote mail server

Question:
What is the "remote server"?
Always the first IP in the delivery-chain?

It is whatever you have the remote mailserver set to. Normally, it is the first IP in the delivery chain. But, if you are using HOP or IPBYPASS lines, those will be applied.

In other words, the first IP that IP-based spam tests will be used on is the one that will appear in %REMOTEIP%.
