In fact, it seems impossible to switch between layouts in gnome (classical version in testing).
The only way I found to have the main layout I use is to do (as root) : dkpg-reconfigure keyboard-configuration and then restart computer. But I can use only one layout this way. None of the layout shown in gnome is the one used in the session. And asking to switch layout has absolutely no effect (gnome keeps showing the default one). I guess the content of /etc/default/keyboard is not related to the information given by : setxkbmap -query I don't know where I could report this bug, as I don't know which program deals with that in gnome.
