If you wish to teach yourself how to backport packages, then start with the PPP package. It is trivial to make the source package work with the woody debhelpers. Alternatively, it is also fairly easy to backport the debhelpers from sarge.
Remember that you'll also need to build a kernel with MPPE support. The pptpclient page on SourceForge has a HOWTO describing how to properly patch the kernel sources.
