The differance between vanilla kernels and debian kernels is that Debian a) removes stuff it believes to not be sufficiently free - something about patches to eeproms b) adds some patches - e.g. some additional network card drivers
Also in my experiance they don't create the /usr/src/linux symlink. They just dump a .tar.bz2 in /usr/src (and maybe some docs in /usr/share/docs but I can't say for definite). Personally I use vanilla kernels - compiled 2.4.25 in the last few hours in fact using kernel-package. Damn security holes...
