I believed that crashes related to iwlwifi affect just network connectivity, but nothing else. Of course, my expectation may be wrong. I can not figure out what python applications may be related to wifi drivers so tightly. Even for networkd-dispatcher it should be python stack traces rather than low level ones.
Anyway if iwlwifi causes so severe side effects in your case then, instead of uninstalling the firmware package, I would consider either disabling device in "BIOS" (UEFI firmware setup nowadays) or disabling the kernel module.
