I'm not given a choice, it just installs whatever it thinks is right
(I assume).

Yes, I just tried that, set 'Legacy only' in the BIOS and I get to the
same non-working, blank screen.

Yes, I can select 'legacy only' in the BIOS but I don't see anwhere
that I can select `grub-pc` to install.
