Primarily, I do (1); though every so often I do a variation of (2). Backups from all the PCs in the house go to drive "A" (a spare desktop in the basement playing server) as a daily process. This is performed with rsync in a cronjob on the PCs dumping to dated directories and symlinking the "current", so the next run just hardlinks anything that hasn't changed. "Drive A" is backed up to "Drive B" (an external USB SSD; only mounted for the copy job, then unmounted afterwards).
