I didn't have this issue about four hours ago. Does anyone have any ideas?
I think there's an apt option APT::AllowReleaseInfoChange (or
soemthing very similar). Check
/usr/share/doc/apt/examples/configure<something>.gz
Sorry, don't remember the exact setting nor the exact file to check for
it off the top of my head.
Having said that, I don't have this issue (yet...)

So I do have these values. But I didn't get any alert that they had
changed.
Sorry for the separate messages, I should have done all this before I
posted.
The oldest backup I have available online is from 2nd December and it
hasn't changed:

I'm not going to go digging through my old offline backups to see
if/when this was different. But it's not something that changed
recently.
