Add this to your sources.list:

deb http://www.gonkgonk.com/mirrors/backports.org/debian stable spamassassin

(or grab a mirror close to you: http://www.backports.org/mirrors.html)

Then apt-get update and then apt-get install spamassassin.

This will give you spamassassin 2.6.
