Not necessarily a guarantee, but having a version in backports is 
generally a good indicator that it should work with that particular 
release (backports is "tracking" the version in testing).

I can confirm that 5.10 from backports works fine with buster, at least 
on a PINE A64+ (5.10 has better support for the display adapter on the 
A64).

In general there is quite a lot of flexibility between kernel versions 
and userland, e.g. on another ARM64 machine buster is running on a 
(special) 3.18 kernel.
