Or can I just change FSTAB and reboot and everything is miraculously where it should be?
The reason that this is a problem is because / is on a 3GB partition, / var/www is on a 27GB partition and home is on a 67GB partition (amazingly /boot is where it should be, on a 68MB ext3 partition) No one partition is above 1GB in usage (that would be /).
