I think it is related to Xen HVM + OVMF.

Anyone has an idea what went wrong ?

Hello,

did you use the "bios='ovmf'" option in the xl.cfg file of your Debian Xen guest? By default, even if OVMF is installed/present on your OS host, Xen uses Seabios, not OVMF (so legacy Bios instead of true UEFI).

This could explain why Microsoft Windows runs without problem as your Xen guest: Win10 can run either on UEFI or a Legacy Bios.
