No multi-boot, one OS per drive, and mobile racks is the easiest:

I use those for my boot arrays. They are not terribly practical for a NAS data drive, particularly for a media server. I use a 16 drive SAS chassis for my data arrays, eight 3-1/2" drives per system, plus a spare loaded in a removable internal tray in each host chassis. It's economical, allows for vast storage, and blazingly fast.
