Looking at the manpage of vnstati, it doesn't support that option. As I see it, your options are:
* If you wish to stick with vnstati (you didn't say WHY you chose that program), either ask the author to support the feature you want or modify the program yourself and offer it back to the author as a patch.
* Switch to something RRD based such as Munin, or something Graphite based such as Grafana, both of which can store data for arbitrary durations and produce graphs from any point in that history.
