The Linux server keeps trying until the exchange server is back up

It depends on how long its configured to keep them... usually it sends a warning after 
4 hours and keeps the mail for a few days.

It depends on the size of your hard drive

Dont forward it to an exchange server... Setup pop / imap on the linux server and 
access the mail from there... No point in having two servers for one purpose unless 
ones for backup.
