Are you sure about that? And even if this is the case: you can still uninstall the running kernel. You just need to make sure to do things in the right order, top down. It looks like you have one big encrypted LUKS container which holds one PV, VG and several LVs. If this is the case you do not need to care about LUKS because you only operate inside the container.
