The simplest solution is to select all the e-mails and copy them to folder (call it 2012, for example). The e-mail folder can then be copied to CD and the folder can be read in another copy of Thunderbird/Icedove.

Since you just want the e-mails from one organization, set a mail filter to select and copy all those e-mail to a folder for that organization. That will make selecting by date easy.
