I have only a meagre knowledge of GNOME and automounting but the cause
of the changes in the permissions on the mount point could lie there.

Comment out or delete the /dev/sdb1 line in /etc/fstab (why do you need
it if GNOME is going to automount the drive?)

Remove the directory /media/8eef3b99-c17b-4913-ae61-d34c7fd5d459.

Use chown and chmod for /media/8eef3b99-c17b-4913-ae61-d34c7fd5d459
created by GNOME.
