AFAIK XFCE is the choice for Ubuntu Studio, to replace GNOME 3 and Unity, I still need to read and reply to latest mails from Ubuntu Studio developers mailing list. Fortunately I've got a backup of the last testing packages with GNOME 2 for Debian and my Ubuntu Studio is an old version, anyway I currently try GNOME 3 with fallback mode for Debian testing.
