Try by installing the "gnome-tweak-tool" package (this package is a
"must" to customize GNOME3) and change the theme from there... not sure

Alternatively, try not installing GNOME.
I don't usually use Gnome (alternatives are Fluxbox and IceWm) but
I must confess I was tempted by 3.
