I'd say it depends on the package... small ones with less dependencies can be downgraded without many problems. Yes, that can be one option... but I prefer to use clonezilla or specialized software for such tasks to avoid messing up file permissions. Another useful tool can be "rsync" to keep unattended set of copies of the whole system at desired intervals but you may still need to manually edit GRUB's files an/or /etc/fstab entries.
