The reason why nouveau is still in staging is that the ABI is not stable yet and that it may break userspace from one kernel version to the next, something which is not acceptable for regular drivers. For instance, the nouveau developers broke compatibility back and forth between 2.6.33 and 2.6.34, and you have to upgrade the kernel, libdrm and the nouveau DDX driver in lock-step. For the Debian packages that means you can use xserver-xorg-video-nouveau from squeeze/sid with the kernel from squeeze/sid (or self-compiled 2.6.33), and xserver-xorg-video-nouveau with the kernel from experimental (or self-compiled 2.6.34 and newer).
